In our open kitchen, our customers often stop for a chat and ask questions about many of the house-made products that I prepare, like our relishes and smokey BBQ sauce. Beetroot relish is one of my favourites as it is a very tasty accompaniment that is sensational with duck or game or vegetarian dishes.
How to Cook Beetroot Relish
Ingredients
Black mustard seeds
2 onions chopped
250g brown sugar
Kilo of beetroot
3 easy steps
In a dry hot pot, cook the mustard seeds until they start to pop; smell their beautiful aroma and then add in olive oil to fry them quickly before adding in the chopped onions. Coat the onions and mustard seeds in the olive oil for 30 seconds.
Stir in the grated beetroot and then add the sugar to balance the savoury flavour of the seeds, season with salt and pepper and cook for 1 minute.
Add Balsamic vinegar to the mixture and cook for approximately 10 minutes until it is a jam-like consistency.
Storing your relish
The relish stores well in an air-tight container in the fridge; or store in jars as preserved beetroot.
How to sterilise jars? It’s easy, either in the oven or in the dishwasher.
